Sweet Potato Casserole (Nancy S. South Carolina)

3 cups cooked sweet potatoes, mashed
1 cup brown sugar
2 eggs, slightly beaten
1 tsp vanilla
1/2 cup milk
1/2 cup melted butter
Topping:
1/2 cup brown sugar
1/3 cup flour
1/3 cup melted butter
! cup chopped pecans

Combine first six ingredients, and pour into a 2 quart baking dish.
Mix topping ingredients and sprinkle over the top.
Bake uncovered ad 350° oven for 30-40 minutes, until hot and browned.

Spiced Cranberry Sauce (Marie Louise H., Canada)

From Bonnie Stern’s Cook Book - Marie Louise’s variations in parenthesis

1 cup orange juice (1 1/2 cup fresh squeezed organic, or half orange juice and half Port)
1 cinnamon stick (or ground cinnamon)
4 cloves
3 cups cranberries (or 4)
1 cup brown sugar (1 cup agavia & 1/3 cup maple syrup)

Heat first 3 ingredients to boil and simmer 5-10 minutes to infuse flavors.
Add the cranberries and sugar and simmer another 5-10 minutes, until the berries pop and the sauce thickens.  Pour into bowl and chill.
